Onion Pogaca - Turkish Pastry



A great, conversation driven, Turkish Pastry recipe.

Usually, we get scared of the smell of an onion but cannot refuse as well. Undoubtedly, onion is the inevitable ingredient of almost every food.

What's best in this recipe is that there will be no smell of onion which makes this recipe privileged for us. Because we won't be using any meat or any other ingredient except carrot, it will be super light and digestible.

Buy all the ingredients

For Pastry: 

  • 1 Turkish Tea Cup of sunflower oil
  • 2 tablespoons of butter
  • 1 Turkish Tea Cup of Turkish Yoghurt
  • 1 white of the egg
  • 1 tablespoon of vinegar
  • 1 tablespoon of salt (Sea or Table up to your decision)
  • 1 pack of baking soda - powder
  • 3 glasses of flour


  • 3x Onion
  • 1 tablespoon of olive oil
  • 1/2 carrot
  • 1 tablespoon of salt
  • 1 Turkish Tea Spoon of black pepper

To Brush the Top: 

  • 1 yellow of the egg 
  • 1 tablespoon of black sesame
  • 1 tablespoon of sesame


Important Tips:

If you add vinegar when you are preparing the though, the pastry will softly dissolve while eating. 


How to cook?

How to make Salpicon: Cut the onions bigger than a cube sugar and grate the carrot.

Heat the pan up and add olive oil. Once the olive oil gets ready, saute the carrots into the pan. Add a bit of salt and black pepper. Cool the onions by taking off of the fire when they got pinky.

Turn the oven to 160° 


How to make the dough: Place the flour into a wide bowl. Place the rest of the other ingredients into the bowl and start kneading.

Keep kneading until the dough doesn't get stuck to your hand.

Wrap the dough in a stretch film and rest it for 10-15min in the refrigerator.

Place oily paper into the oven tray.

Take out your dough and start jabbing out small pieces and give a shape of a small pancake. Place some onions from the cooled pan and close the pancaked shaped doughs.

Brush the yellow of egg around the top and add black-white sesames around.

Once you are finished with whole, place them in your tray and put it in the oven for 30-35min.

Once small tip for service; If you like, you can add some water to your yellow of the egg so you can reduce the burned colour of the pastry.
