Ayvar is a kind of red pepper paste, which is very popular in the Balkan countries and is usually made at home, with roasted eggplant, mild hot pepper, and tomato paste. It is a dish belonging to the type of salad and pickles.

It is widely used, especially for breakfast, alongside floury foods. Ayvar, which is also used with meat and rice dishes, is also used as a spread on bread or as a chips sauce.

The name Ajvar comes from the Turkish word caviar meaning "salted roe, caviar" and has the same etymology as "caviar", which comes from the Persian word "xaviyar". Before the 20th century, myrtle floating from the Black Sea to Belgrade important local caviar production took place in the Danube.
